- 3–4 beef or turkey meatballs
- 1/2 cup mashed potatoes
- 1/3 cup sautéed or roasted carrots
- 1/3 cup steamed green peas
- 1/4 cup brown gravy
- Salt
- Black pepper
- Olive oil
- Garlic powder
Instructions
- Cook the meatballs by baking or pan-searing until browned and cooked through. Simmer in brown gravy for 5-10 minutes.
- Boil peeled potatoes until soft. Mash with butter, milk, salt, and black pepper until smooth.
- Toss carrots in olive oil, garlic powder, and salt. Roast at 400°F for 20-25 minutes or sauté until tender.
- Steam the peas until tender, seasoning with salt and butter.
- Assemble the bowl with mashed potatoes, then add meatballs with gravy, roasted carrots, and steamed peas. Sprinkle with cracked black pepper.
Notes
For extra creaminess in mashed potatoes, add cream cheese or sour cream. You can use store-bought meatballs for convenience.
