Ingredients

- 1/2 lb ground beef or turkey
- 1 egg
- 1/4 cup breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt & pepper to taste
- 1 tbsp olive oil
- 1 cup beef or veggie gravy
- 2 medium russet potatoes, peeled & cubed
- 1 tbsp butter or plant-based butter
- 1/4 cup milk or plant milk
- 1 cup green peas, steamed
- 1 cup carrots, chopped
- 1 tsp maple syrup or honey
- Salt & pepper
Instructions
- In a bowl, combine the ground meat, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper. Form into meatballs.
- Heat olive oil in a pan over medium heat. Sear the meatballs until browned on all sides. Pour in the gravy and let it simmer.
- Boil potatoes in water until soft. Drain and mash with butter, milk, salt, and pepper until smooth.
- Sauté carrots in a separate pan with maple syrup and a pinch of salt until caramelized and tender.
- Steam or microwave peas with a bit of salt until warm.
- Assemble the bowl with a layer of mashed potatoes, followed by meatballs with gravy, glazed carrots, and steamed peas.
Notes
Serve hot, with a sprinkle of fresh herbs if desired. Can be accompanied by crusty bread.
