- 4 ears of corn, husks pulled back
- 4 tbsp unsalted butter, melted
- 2 garlic cloves, minced
- 1 tbsp fresh lemon juice
- 1 tsp smoked paprika
- 1/2 tsp crushed red pepper flakes
- 1 tbsp chopped parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp grated Parmesan (optional)
Instructions
- Preheat the grill to medium-high heat. Grill the corn for 10–12 minutes, turning occasionally to char all sides.
- In a bowl, whisk together the melted butter, minced garlic, lemon juice, smoked paprika, crushed red pepper flakes, parsley, salt, and black pepper.
- Generously slather the grilled corn with the cowboy butter while it’s still hot.
- Optional: Sprinkle with grated parmesan for an extra savory bite.
- Plate the corn with the husks pulled back, sprinkle with extra parsley, and enjoy!
Notes
For extra sweetness, choose fresh sweet corn. Store leftovers wrapped in the refrigerator and consume within 2-3 days.
