- 1 cup cottage cheese (low-fat or full-fat)
- 1/2 cup milk (or unsweetened almond milk)
- 1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed & drained well)
- 1/2 cup shredded cheese (optional, like cheddar or mozzarella)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, whisk together the eggs, cottage cheese, and milk until smooth.
- Stir in the chopped spinach, salt, pepper, and shredded cheese if using.
- Pour the mixture into a greased pie dish or baking dish.
- Bake for 30-35 minutes, or until the quiche is set and the top is lightly golden.
- Let it cool for a few minutes before slicing and serving.
Notes
Serve warm or at room temperature with a fresh salad or fruit. Pairs well with sour cream or hot sauce.
