Ingredients

  • 1 cup cottage cheese (low-fat or full-fat)
  • 1/2 cup milk (or unsweetened almond milk)
  • 1 cup fresh spinach, chopped (or 1/2 cup frozen spinach, thawed & drained well)
  • 1/2 cup shredded cheese (optional, like cheddar or mozzarella)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, cottage cheese, and milk until smooth.
  3. Stir in the chopped spinach, salt, pepper, and shredded cheese if using.
  4. Pour the mixture into a greased pie dish or baking dish.
  5. Bake for 30-35 minutes, or until the quiche is set and the top is lightly golden.
  6. Let it cool for a few minutes before slicing and serving.
