Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup hot coffee or hot water
  • 1 cup white chocolate chips
  • 1 1/2 cups heavy whipping cream, divided
  • 1/4 cup granulated sugar (for mousse)
  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • 1 cup dark chocolate chips (for ganache)
  • Optional: Chocolate shavings, curls, or sprinkles for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, beat the eggs, granulated sugar, and vegetable oil until smooth. Mix in the buttermilk and vanilla.
  4. Combine the wet and dry ingredients. Stir in the hot coffee until well mixed.
  5. Bake for 30-35 minutes. Let the cakes cool completely.
  6. For the white chocolate mousse, melt the white chocolate with 1/2 cup of cream over low heat. Let it cool slightly. Whip the remaining cream with sugar and fold it into the melted white chocolate.
  7. For the dark chocolate mousse, melt the dark chocolate with 1/2 cup of cream. Let it cool, then whip the remaining cream with sugar and fold it into the dark chocolate.
  8. To assemble the cake, place one layer on a plate and spread the white chocolate mousse on top. Add the second layer and spread the dark chocolate mousse on top.
  9. For the ganache, heat 1/2 cup heavy cream until it simmers. Pour it over the dark chocolate and stir until smooth. Pour the ganache over the cake.
  10. Refrigerate the cake for at least 2 hours. Garnish with chocolate shavings, curls, or sprinkles if desired.
