Ingredients

- 100 g butter
- 1 egg yolk
- 1 lemon zest
- 30 g powdered sugar
- 150 g condensed milk
- 250 g cornstarch
- 80 g 0000 flour
- 1/2 tsp baking powder
- 400 g dulce de leche
Instructions
- Preheat your oven to 180°C (350°F).
- Cream the butter and powdered sugar until light and fluffy.
- Add the egg yolk and lemon zest, mixing until well combined.
- Gradually add the condensed milk and mix until smooth.
- In a separate bowl, combine the cornstarch, flour, and baking powder.
- Gradually add the dry ingredients to the wet mixture until a dough forms.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Bake for about 12-15 minutes, or until the edges are lightly golden.
- Allow to cool slightly, then sandwich them with dulce de leche to form alfajores.
Notes
Store the cookies in an airtight container at room temperature for up to a week. They can also be frozen for longer storage.
