Description

Soft, sweet cookies that melt in your mouth, perfect for pairing with tea or serving at gatherings.


Ingredients

  • 100 g butter
  • 1 egg yolk
  • 1 lemon zest
  • 30 g powdered sugar
  • 150 g condensed milk
  • 250 g cornstarch
  • 80 g 0000 flour
  • 1/2 tsp baking powder
  • 400 g dulce de leche

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cream the butter and powdered sugar until light and fluffy.
  3. Add the egg yolk and lemon zest, mixing until well combined.
  4. Gradually add the condensed milk and mix until smooth.
  5. In a separate bowl, combine the cornstarch, flour, and baking powder.
  6. Gradually add the dry ingredients to the wet mixture until a dough forms.
  7. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  8. Bake for about 12-15 minutes, or until the edges are lightly golden.
  9. Allow to cool slightly, then sandwich them with dulce de leche to form alfajores.

Notes

Store the cookies in an airtight container at room temperature for up to a week. They can also be frozen for longer storage.
