Ingredients

- 1 zucchini, sliced and halved
- 1 1/2 cups sweet corn (fresh, frozen, or canned)
- 4 slices bacon, cooked and crumbled
- 1/2 cup shredded cheddar or Monterey Jack
- Salt & pepper to taste
- 1 tbsp olive oil or bacon drippings
Instructions
- Heat oil in a skillet and sauté zucchini until just tender.
- Add corn, season with salt and pepper, and cook for 3–4 minutes.
- Stir in the crispy bacon and sprinkle with cheese.
- Serve hot and enjoy the melty, crispy goodness!
Notes
For extra flavor, add chopped garlic or onion when sautéing the zucchini. Substitute bell peppers or yellow squash for variation.
