Description

A delightful dish combining fresh zucchini, sweet corn, and crispy bacon, perfect for summer and easy to prepare year-round.


Ingredients

  • 1 zucchini, sliced and halved
  • 1 1/2 cups sweet corn (fresh, frozen, or canned)
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar or Monterey Jack
  • Salt & pepper to taste
  • 1 tbsp olive oil or bacon drippings

Instructions

  1. Heat oil in a skillet and sauté zucchini until just tender.
  2. Add corn, season with salt and pepper, and cook for 3–4 minutes.
  3. Stir in the crispy bacon and sprinkle with cheese.
  4. Serve hot and enjoy the melty, crispy goodness!

Notes

For extra flavor, add chopped garlic or onion when sautéing the zucchini. Substitute bell peppers or yellow squash for variation.
