- 1/2 tsp salt
- 2.6 oz (1/3 cup) brown sugar, tightly packed
- 1 egg
- 1 tsp vanilla extract
- 4.4 oz (1 cup) all-purpose flour
- 4 oz (2/3 cup) semisweet mini chocolate chips
- 16 oz (2 packets) cream cheese
- 2 tsp cornflour (cornstarch)
- 3.5 oz (1/2 cup) granulated sugar
- Pinch of salt
- 1/2 cup whipping cream
- Blue gel food coloring
- 1 tsp vanilla extract
- 3 eggs
- 15 Oreo cookies, crushed
- 6 oz (1 cup) semisweet chocolate chips
- 1/2 cup (118 ml) whipping cream
- Pinch of salt
- Mini chocolate chip cookies
Instructions
- Preheat the oven to 350°F (180°C). Grease an 8-inch springform pan, line the bottom with parchment paper, and dust the sides with flour.
- For the Blondie: In a heatproof bowl, melt the butter, salt, and brown sugar together. Once cooled, whisk in the egg and vanilla. Fold in the flour and mini chocolate chips. Spread into the pan and bake for 15 minutes. Let cool and reduce the oven temperature to 300°F (150°C).
- For the Cheesecake: In a bowl, whip the cream cheese, cornflour, and sugar until smooth. Add salt, whipping cream, blue coloring, and vanilla. Mix, then add eggs one at a time and fold in crushed Oreos.
- Pour the cheesecake batter over the blondie.
- Wrap the pan in foil, place it in a larger tray, and fill with hot water. Bake for 60-70 minutes until slightly jiggly. Let it cool in the oven.
- For the Ganache: Melt chocolate chips with cream and salt until smooth, then cool.
- Once the cheesecake is chilled, spread ganache on top and decorate with mini chocolate chip cookies. Slice and enjoy!

Store leftovers in the fridge for 3 to 5 days or freeze for up to 2 months. Ensure all ingredients are at room temperature for a smooth batter.
