Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs, room temperature
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 pint cookie dough ice cream, softened
  • 1/2 cup mini chocolate chips
  • Whipped cream (optional)
  • Chocolate drizzle (optional)
  • Mini cookie dough balls (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and grease it lightly.
  2. In a bowl, sift together the flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, beat the eggs and sugar until pale and thick (about 5 minutes). Add the oil and vanilla extract, mixing well.
  4. Gently fold in the dry ingredients until combined.
  5. Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes or until the top springs back when touched.
  6. While the cake is still warm, invert it onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper and roll the cake up tightly with the towel. Let it cool completely.
  7. Once the cake has cooled, unroll it and spread the softened cookie dough ice cream evenly over the surface. Sprinkle mini chocolate chips on top.
  8. Re-roll the cake (without the towel) and wrap it tightly in plastic wrap. Freeze for at least 4 hours or until firm.
  9. Before serving, drizzle the cake roll with chocolate and top with whipped cream and mini cookie dough balls. Slice and enjoy!

Notes

For best results, ensure eggs are at room temperature before whipping. Dusting with powdered sugar prevents sticking when rolling.
