Description

A delightful dessert combining rich chocolate cake, creamy vanilla ice cream, and delicious cookie dough – perfect for celebrations.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup unsalted butter, softened (for cake)
  • 1 quart vanilla ice cream, slightly softened
  • 1/2 cup unsalted butter, softened (for cookie dough)
  • 1/2 cup chocolate chips
  • 1 cup granulated sugar (for cake)
  • 1/2 cup granulated sugar (for cookie dough)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, cocoa powder, and baking powder. Set aside.
  3. In another bowl, cream together 1/2 cup butter and 1 cup sugar until light and fluffy.
  4. Gradually mix in the dry ingredients until smooth.
  5. Pour the batter into the prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool completely.
  6. For the cookie dough layer, cream together the remaining 1/2 cup butter and 1/2 cup sugar.
  7. Stir in 1 cup flour and chocolate chips. Set aside.
  8. To assemble, layer one chocolate cake round, a layer of cookie dough, and slightly softened vanilla ice cream.
  9. Place the second cake layer on top and frost the entire cake with powdered sugar frosting or whipped cream.
  10. Chill in the refrigerator for at least 120 minutes to set.
  11. Slice the cake into pieces and serve with extra chocolate chips or sprinkles on top.

Notes

Make sure the ice cream is slightly softened for easier layering. Don’t skip chilling the cake for easier serving.
