- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 cup unsalted butter, softened
- 1/2 cup unsalted butter, softened (for cookie dough)
- 1/2 cup chocolate chips
- 1 quart vanilla ice cream, slightly softened
- Powdered sugar frosting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
- In a bowl, mix the dry ingredients for the cake: flour, cocoa powder, and baking powder.
- In another bowl, cream the softened butter. Combine the creamed butter with the dry ingredients until well mixed.
- Pour the batter into the prepared pans and bake for 25-30 minutes. Check if it’s done by inserting a toothpick; if it comes out clean, the cake is ready. Let the cakes cool.
- While the cake cools, make the cookie dough by creaming together the butter and sugars in a bowl. Mix in the flour and chocolate chips until well combined.
- To assemble, layer one chocolate cake on a plate. Spread a layer of cookie dough over it, then add a layer of softened ice cream. Place the second cake layer on top, pressing gently to combine all layers.
- If desired, frost the cake with powdered sugar frosting. Refrigerate the cake for at least 120 minutes before serving.
Notes
Store leftovers in the refrigerator for up to 3 days or freeze individual slices for up to a month.
