Description
A delightful fusion of rich chocolate cake, cookie dough, and creamy vanilla ice cream wrapped together in cake rolls.
Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1 cup unsalted butter, softened (1/2 cup for cake, 1/2 cup for cookie dough)
- 1/2 cup chocolate chips
- 1 quart vanilla ice cream, slightly softened
- Powdered sugar frosting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
- Mix the dry ingredients for the cake: flour, cocoa powder, and baking powder.
- In a separate bowl, cream the softened butter. Combine the creamed butter with the dry ingredients and mix well.
- Pour the batter equally into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Allow the cakes to cool completely.
- For the cookie dough, cream the remaining butter and sugar until fluffy. Add the flour and chocolate chips, mixing until well combined.
- Once the cakes are cooled, take one chocolate cake layer and spread a layer of cookie dough over it. Then, add softened ice cream on top of the cookie dough.
- Place the second cake layer on top, pressing gently to combine.
- If desired, frost the cake with powdered sugar frosting. Place the cake in the refrigerator for at least 2 hours before serving.
Notes
Make sure your butter is softened for better mixing and don’t skip refrigeration for better slicing.
