Ingredients

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 cup mini chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter and sugar until mixed. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  3. Sift in the flour, cocoa powder, and salt. Mix until just combined. Divide the batter evenly between the prepared pans and smooth it out. Bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs. Let them cool in the pans.
  4. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add the milk and vanilla extract, mixing well.
  5. Stir in the flour and salt until fully combined, then fold in the mini chocolate chips. Spread the cookie dough evenly over one of the cooled brownie layers.
  6. In a heatproof bowl, combine the chocolate chips and heavy cream. Microwave in 30-second bursts, stirring in between until smooth and glossy. Let it cool slightly.
  7. Place the second brownie layer on top of the cookie dough and pour the ganache over the top, letting it drip down the sides.
  8. Allow the ganache to set for about 30 minutes before slicing. Serve with milk or vanilla ice cream.

Notes

For a richer flavor, use high-quality cocoa powder. Ensure all ingredients are at room temperature for better texture.
