A delightful dessert combining fudgy brownies with creamy cookie dough filling and rich chocolate ganache.

- 1 1/2 cups vegetable oil
- 3 cups sugar
- 3 tsp vanilla extract
- 6 large eggs
- 1 1/2 cups all-purpose flour
- 1 cup cocoa powder
- 3/4 tsp baking powder
- 1/4 tsp salt
- 3 sticks unsalted butter, room temperature
- 3/4 cup light brown sugar, packed
- 3 1/2 cups confectioners’ sugar
- 1 cup all-purpose flour
- 3/4 tsp salt
- 3 tbsp milk
- 2 1/2 tsp vanilla extract
- 4 oz semi-sweet chocolate, finely chopped
- 1/2 cup heavy whipping cream
- 1/4 cup light corn syrup
- 2 tsp vanilla extract
- Extra chocolate chips for garnish
Instructions
- Preheat the oven to 350°F (175°C). Line three 8-inch round baking pans with parchment paper and cooking spray.
- In a large bowl, mix sugar and vegetable oil. Stir in the eggs one at a time until well combined. Add vanilla extract.
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients, stirring just until combined.
- Divide the batter among the prepared pans and bake for 20-25 minutes or until a toothpick comes out with moist crumbs. Cool completely and set aside.
- In another bowl, beat the butter and brown sugar until light and fluffy. Mix in the confectioners’ sugar until smooth. Add flour, salt, milk, and vanilla; beat until fluffy.
- Heat the heavy cream in the microwave until hot (about 45 seconds). Pour it over the chopped chocolate and let sit for 30 seconds. Stir until smooth, then mix in corn syrup and vanilla. Set aside.
- Place one brownie layer on a serving platter. Spread 1 cup of cookie dough filling over it, then repeat with the second brownie layer. Place the final brownie layer on top and refrigerate the assembled cake for 10 minutes.
- Pour the chocolate ganache over the top of the cake, using a spatula to spread it gently to the edges. Refrigerate for 20 minutes to set.
- Pipe any remaining filling decoratively around the top. Garnish with chocolate chips and drizzle with extra ganache.
Notes
Allow the brownies to cool completely before layering to avoid a melted mess. Feel free to add nuts or chocolate chips for added texture.
