A delightful dessert combining rich brownies and delicious cookie dough, topped with luscious ganache.


Ingredients

  • 2 cups granulated sugar (for brownie layers)
  • 4 large eggs (for brownie layers)
  • 1 tsp vanilla extract (for brownie layers)
  • 1 cup all-purpose flour (for brownie layers)
  • 1 cup unsweetened cocoa powder (for brownie layers)
  • 1/2 tsp salt (for brownie layers)
  • 1/2 cup unsalted butter, softened (for cookie dough layer)
  • 3/4 cup brown sugar, packed (for cookie dough layer)
  • 1/4 cup granulated sugar (for cookie dough layer)
  • 2 tbsp milk (for cookie dough layer)
  • 1 tsp vanilla extract (for cookie dough layer)
  • 1 cup all-purpose flour (for cookie dough layer)
  • 1/2 tsp salt (for cookie dough layer)
  • 1 cup mini chocolate chips (for cookie dough layer)
  • 1 cup semi-sweet chocolate chips (for ganache)
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, whisk together the melted butter and sugar until combined. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract.
  3. Sift in the flour, cocoa powder, and salt, mixing until just combined. Divide the batter between the two pans and smooth it out.
  4. Bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs. Let the layers cool completely in the pans.
  5. In another mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the milk and vanilla extract, mixing until well combined.
  6. Stir in the flour and salt, then fold in the mini chocolate chips. Once the brownie layers are cool, spread the cookie dough evenly over one of the brownie layers.
  7. In a heatproof bowl, mix the chocolate chips and heavy cream. Microwave this mixture in 30-second intervals, stirring between each, until it’s smooth and glossy. Let it cool slightly.
  8. Place the second brownie layer on top of the cookie dough layer. Pour the chocolate ganache over the top, allowing it to drip down the sides for a beautiful finish.
  9. Let the ganache set for at least 30 minutes before slicing and serving.

Notes

Serve with a scoop of vanilla ice cream or a glass of cold milk. Leftovers can be stored in an airtight container at room temperature for up to three days.
