A delightful dessert combining rich brownies and delicious cookie dough, topped with luscious ganache.

- 1/2 cup unsalted butter, softened (for cookie dough layer)
- 3/4 cup brown sugar, packed (for cookie dough layer)
- 1/4 cup granulated sugar (for cookie dough layer)
- 2 tbsp milk (for cookie dough layer)
- 1 tsp vanilla extract (for cookie dough layer)
- 1 cup all-purpose flour (for cookie dough layer)
- 1/2 tsp salt (for cookie dough layer)
- 1 cup mini chocolate chips (for cookie dough layer)
- 1 cup semi-sweet chocolate chips (for ganache)
- 1/2 cup heavy cream (for ganache)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a large bowl, whisk together the melted butter and sugar until combined. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract.
- Sift in the flour, cocoa powder, and salt, mixing until just combined. Divide the batter between the two pans and smooth it out.
- Bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs. Let the layers cool completely in the pans.
- In another mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the milk and vanilla extract, mixing until well combined.
- Stir in the flour and salt, then fold in the mini chocolate chips. Once the brownie layers are cool, spread the cookie dough evenly over one of the brownie layers.
- In a heatproof bowl, mix the chocolate chips and heavy cream. Microwave this mixture in 30-second intervals, stirring between each, until it’s smooth and glossy. Let it cool slightly.
- Place the second brownie layer on top of the cookie dough layer. Pour the chocolate ganache over the top, allowing it to drip down the sides for a beautiful finish.
- Let the ganache set for at least 30 minutes before slicing and serving.
Notes
Serve with a scoop of vanilla ice cream or a glass of cold milk. Leftovers can be stored in an airtight container at room temperature for up to three days.
