- 1 1/2 cups all-purpose flour
- 3/4 cup cake flour
- 2 tsp cornstarch
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup creamy cookie butter (e.g., Lotus Biscoff)
- 3/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 tbsp cookie butter emulsion (optional)
- 1 tsp vanilla extract
- 1 1/2 cups chocolate chips (milk, semi-sweet, or dark)
- 10 Biscoff cookies, crushed
Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a large bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt. Set aside.
- Using a stand mixer, cream the cold butter, cookie butter, and sugars on medium speed for 2-3 minutes.
- Mix in the egg, egg yolk, cookie butter emulsion, and vanilla extract.
- Gradually add the dry ingredients to the wet mixture and fold in the chocolate chips and crushed Biscoff cookies.
- Divide dough into 8 large balls, press halves back together with jagged edges for a rustic look.
- Place cookies on prepared sheets and bake for 10-12 minutes until edges are slightly golden.
- While warm, use a cookie cutter to shape each cookie evenly.
- Cool on the baking sheet for 15 minutes before transferring to a wire rack.
