Ingredients

- 1 cup green or brown lentils (dry or 2 1/2 cups cooked)
- 2 cups fresh arugula
- 1/3 cup sun-dried tomatoes, thinly sliced (in oil, drained)
- 1/4 cup red onion, thinly sliced
Instructions
- If using dry lentils, rinse and cook them according to package instructions. Allow to cool.
- In a large bowl, combine the cooked lentils, arugula, sun-dried tomatoes, and red onion.
- Toss gently to mix everything together.
- Serve chilled or at room temperature.
Notes
For added flavor, squeeze some lemon juice over the salad before serving. Customize with your favorite herbs or add feta cheese for a creamier texture.
