- 50g walnut pieces
- 225g caster sugar
- 225g unsalted butter, softened
- 200g plain flour
- 4 teaspoons instant espresso powder
- 2 ½ teaspoons baking powder
- ½ teaspoon bicarbonate of soda
- 4 large eggs
- 1–2 tablespoons milk
Instructions
- Preheat the oven to 180°C (350°F) and grease a cake tin.
- Cream together the softened butter and caster sugar until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition.
- In a separate bowl, combine the flour, baking powder, bicarbonate of soda, and espresso powder.
- Gradually add the dry ingredients to the creamed mixture, alternating with milk until the batter is smooth.
- Fold in the walnut pieces.
- Pour the batter into the prepared cake tin and smooth the top.
- Bake for 25-30 minutes or until a skewer inserted into the center comes out clean.
- Let the cake cool in the tin for a few minutes before transferring it to a wire rack to cool completely.
Notes
Serve plain or with a dusting of icing sugar. Pairs well with coffee or tea.
