Description

A delicious combination of rich coffee flavor and crunchy walnuts, perfect for tea time or dessert.


Ingredients

  • 50g walnut pieces
  • 225g caster sugar
  • 225g unsalted butter, softened
  • 200g plain flour
  • 4 teaspoons instant espresso powder
  • 2 ½ teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • 4 large eggs
  • 12 tablespoons milk

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a cake tin.
  2. Cream together the softened butter and caster sugar until light and fluffy.
  3. Beat in the eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, combine the flour, baking powder, bicarbonate of soda, and espresso powder.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with milk until the batter is smooth.
  6. Fold in the walnut pieces.
  7. Pour the batter into the prepared cake tin and smooth the top.
  8. Bake for 25-30 minutes or until a skewer inserted into the center comes out clean.
  9. Let the cake cool in the tin for a few minutes before transferring it to a wire rack to cool completely.

Notes

Serve plain or with a dusting of icing sugar. Pairs well with coffee or tea.
