Coffee and Chocolate Sponge Cake

Description

A delightful dessert combining rich chocolate flavor with a hint of coffee, perfect for any occasion.


Ingredients

  • 6 eggs
  • 1 1/4 cups caster sugar
  • 3/4 cup self-raising flour
  • 1/4 cup plain flour
  • 1/2 cup cornflour
  • 1/4 cup cocoa
  • 600ml thickened cream
  • 2 tsp instant espresso powder
  • 1/4 cup hot water
  • 1/4 cup caster sugar
  • 125g butter, softened
  • 2 cups icing sugar, sifted
  • 3 tbsp cream
  • 1 tsp vanilla paste

Instructions

  1. Preheat the oven to 180°C (350°F) and grease and line cake pans.
  2. In a large bowl, beat the eggs and sugar until pale and fluffy.
  3. Sift the self-raising flour, plain flour, cornflour, and cocoa together. Gently fold this mixture into the egg mixture until combined.
  4. Divide the batter between the prepared pans and bake for 25-30 minutes, or until a skewer comes out clean.
  5. For the filling, dissolve the instant espresso powder in hot water and mix it with sugar. Whip the thickened cream until soft peaks form, then fold in the espresso mixture.
  6. Once the cake layers are cool, spread the cream filling between them.
  7. For the icing, beat the softened butter with icing sugar, adding cream and vanilla paste until smooth.
  8. Spread the icing over the top and sides of the cake.
  9. Serve and enjoy!

Notes

Make sure your eggs are at room temperature and use high-quality cocoa powder for better flavor.
