- 1 can (14 oz) coconut milk
- 1 cup heavy cream
- 3/4 cup sugar
- 1/4 cup lime juice
- Zest of 1 lime
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- In a mixing bowl, whisk together the coconut milk, heavy cream, sugar, lime juice, lime zest, vanilla extract, and a pinch of salt until the sugar is fully dissolved.
- Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes.
- Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
- Serve in bowls or cones, optionally garnished with additional lime zest.

Use fresh limes for the best flavor and ensure to whisk the mixture well to dissolve the sugar completely.
