Delightful coconut bars with a creamy filling and buttery graham cracker crust, perfect for any occasion.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 1/2 cups shredded coconut
  • 1/2 cup chopped pecans
  • 1 cup white chocolate chips
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture evenly into the bottom of the prepared pan.
  3. In a separate bowl, combine sweetened condensed milk, shredded coconut, and chopped pecans. Spread this mixture over the crust.
  4. Bake for 25-30 minutes until lightly golden. Let cool completely.
  5. Heat heavy cream in a saucepan until just boiling. Stir in white chocolate chips until smooth, then add vanilla extract.
  6. Pour the white chocolate mixture over the cooled coconut layer and chill for at least 2 hours.
  7. Cut into bars and serve.

Notes

Best served chilled. Can be topped with extra shredded coconut or whipped cream.
