  • 1/2 cup butter
  • 1 cup coconut milk
  • 3 eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 2 cups shredded coconut
  • 1 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour and baking powder together.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add the eggs and vanilla extract to the butter mixture and mix well.
  5. Alternate adding the flour mixture and coconut milk to the wet ingredients, mixing until smooth.
  6. Pour the batter into a greased cake pan.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool completely.
  9. Frost the cooled cake with whipped cream and sprinkle shredded coconut on top.
  10. Chill before serving.
