A light and fluffy dessert made using the blender method, perfect for any occasion.
Ingredients

- 3 eggs
- 1 cup (200g) sugar
- 1/2 cup (120ml) milk
- 1/2 cup (120ml) vegetable or canola oil
- 1 1/2 cups (190g) all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract (optional)
- A pinch of salt
- Optional Add-Ins: Lemon zest, Cocoa powder, Coconut flakes
Instructions
- Preheat your oven to 350°F (180°C) and grease a cake pan.
- In a blender, add eggs, sugar, milk, oil, vanilla extract, and salt. Blend for about 1 minute until smooth.
- Add flour and baking powder to the blender and blend for 30 seconds to 1 minute until combined.
- Pour the batter into the greased pan and bake for 30–40 minutes, or until a toothpick comes out clean.
- Let the cake cool for 10–15 minutes before removing it from the pan. Dust with powdered sugar or drizzle with chocolate sauce if desired.
Notes
Make sure all your ingredients are at room temperature. Don’t over-blend the batter after adding the flour.
