- 200g dates, chopped
- 250ml boiling water
- 1 tsp baking soda
- 100g unsalted butter, softened
- 150g brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 200g self-rising flour
- A pinch of salt
- 200ml heavy cream
- 100g dark brown sugar
Instructions
- Preheat the oven to 180°C (350°F) and grease your favorite mold.
- Soak the chopped dates in boiling water with baking soda. Let them rest for 15 minutes.
- Beat the butter and sugar until fluffy.
- Add eggs one by one along with vanilla, mixing well after each addition.
- Incorporate flour and a pinch of salt, mixing gently.
- Add the date mixture (with liquid) and stir until combined.
- Pour the dough into the mold and bake for 30-35 minutes, until a toothpick comes out clean.
- For the caramel sauce, heat cream and dark brown sugar in a saucepan over medium heat. Cook over low for 5 minutes until thickened.
- Take pudding out of the oven, make holes in the top, and pour half of the hot sauce over it to soak in.
- Serve hot with the remaining caramel sauce drizzled on top.
Notes
Serve warm with vanilla ice cream or whipped cream for an extra treat. Store leftovers in an airtight container for up to 3 days.
