- 6 cups fresh baby spinach, washed and dried
- 4 slices bacon, chopped
- 2 hard-boiled eggs, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup mushrooms, thinly sliced
Instructions
- In a large bowl, combine the fresh baby spinach, red onion, and mushrooms.
- In a skillet, cook the chopped bacon until crispy.
- Remove the bacon and let it drain on paper towels.
- Add the cooked bacon and sliced hard-boiled eggs to the salad.
- Toss everything together gently and serve immediately.
Notes
