Ingredients

  • 6 cups fresh baby spinach, washed and dried
  • 4 slices bacon, chopped
  • 2 hard-boiled eggs, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup mushrooms, thinly sliced

Instructions

  1. In a large bowl, combine the fresh baby spinach, red onion, and mushrooms.
  2. In a skillet, cook the chopped bacon until crispy.
  3. Remove the bacon and let it drain on paper towels.
  4. Add the cooked bacon and sliced hard-boiled eggs to the salad.
  5. Toss everything together gently and serve immediately.
