Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder (unsweetened)
  • 1/2 teaspoon salt
  • 1 cup buttermilk, room temperature
  • 1 cup vegetable oil
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring (liquid or gel)
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 16 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
  3. In a medium bowl, whisk together the buttermilk, vegetable oil, eggs, red food coloring, vinegar, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix on low speed until just combined and smooth.
  5. Divide the batter evenly between the two prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cakes cool in the pans for about 10 minutes before inverting onto a wire rack to cool completely.
  8. Prepare the cream cheese frosting. Beat the softened cream cheese and butter until smooth, then gradually add the sifted powdered sugar, beating until smooth.
  9. Beat in the vanilla extract until the frosting is light and fluffy.
  10. Once the cakes are cool, frost the cake with one layer on a serving plate, spreading frosting over the top, then place the second layer and frost the top and sides.
  11. Decorate with red velvet cake crumbs or chocolate drizzles if desired.

Notes

Use room temperature ingredients for the best texture. Be careful not to overmix the batter after adding the wet ingredients.
