Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a mixing bowl, sift together all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract and beat together on medium speed for about 2 minutes.
  4. Slowly stir in the boiling water.
  5. Pour the batter evenly into prepared pans.
  6. Bake in the oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Make sure all ingredients are at room temperature. Sifting helps make the cake lighter. Adding boiling water ensures a moist cake.
