Description

A comforting dish made with ground beef, breadcrumbs, and a sweet tangy glaze, perfect for family dinners.


Ingredients

  • 2 lbs ground beef (80/20)
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 2 large eggs
  • 3/4 cup milk
  • 1 cup breadcrumbs
  • 2 tbsp Worcestershire sauce
  • 2 tsp dried parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, onion, garlic, eggs, milk, breadcrumbs, Worcestershire sauce, salt, black pepper, and dried parsley. Mix gently until just combined.
  3. Shape the mixture into a loaf shape on the baking sheet.
  4. In a small bowl, mix the ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Brush half of this glaze over the top of the meatloaf.
  5. Bake in the oven for 45 minutes, then brush with the remaining glaze. Bake for an additional 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Let the meatloaf sit for 10 minutes before slicing.

Notes

Serve with mashed potatoes or roasted vegetables. Leftovers can be stored in the fridge for up to 3-4 days.
