- 2 lbs ground beef (80/20)
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 2 large eggs
- 3/4 cup milk
- 1 cup breadcrumbs
- 2 tbsp Worcestershire sauce
- 2 tsp dried parsley
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the ground beef, onion, garlic, eggs, milk, breadcrumbs, Worcestershire sauce, salt, black pepper, and dried parsley. Mix gently until just combined.
- Shape the mixture into a loaf shape on the baking sheet.
- In a small bowl, mix the ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Brush half of this glaze over the top of the meatloaf.
- Bake in the oven for 45 minutes, then brush with the remaining glaze. Bake for an additional 15–20 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf sit for 10 minutes before slicing.
Notes
Serve with mashed potatoes or roasted vegetables. Leftovers can be stored in the fridge for up to 3-4 days.
