Description

Ingredients

  • 3/4 cup unsweetened cocoa powder

  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 egg yolks
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 6 ounces semisweet chocolate, chopped
  • 1/2 cup unsalted butter, at room temperature (for frosting)
  • 1 1/2 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs and egg yolks one at a time, then stir in the vanilla.
  5. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with flour. Beat until just combined.
  6. Stir in the boiling water until smooth.
  7. Pour the batter into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  9. To make the frosting, melt the chocolate and butter together in a heatproof bowl set over a saucepan of simmering water. Stir until smooth.
  10. Remove from heat and let cool slightly. Beat in the powdered sugar, heavy cream, and vanilla until smooth.
  11. Frost the cooled cake layers and decorate as desired.

Notes

Use fresh ingredients for the best flavor and texture. Make sure your butter is at room temperature for easier creaming.
