Description

A delightful no-bake dessert featuring creamy mascarpone cheese and a sweet cherry topping over a crunchy biscuit base.


Ingredients

  • 200g digestive biscuits (or speculoos)
  • 100g melted butter
  • 250g mascarpone
  • 200g fresh cheese (Philly style)
  • 100g powdered sugar
  • 1 teaspoon vanilla extract
  • 250ml whole liquid cream (well cold)
  • 400g dried cherries (fresh or canned)
  • 100g sugar
  • 1 tablespoon cornstarch (maïzena)
  • 1 tablespoon lemon juice
  • 100ml water

Instructions

  1. Reduce the biscuits into thin crumbs using a mixer or by crushing them with a pastry roll. Mix with melted butter until it gets a sandy texture. Spread and press this mixture into the bottom of a 20 cm hinged mold. Refrigerate for 30 minutes to firm.
  2. In a bowl, whisk together the mascarpone, fresh cheese, powdered sugar, and vanilla extract until smooth. Whip the cold liquid cream until stiff, then gently fold it into the cheese mixture using a spatula. Pour this cream over the biscuit base and smoothen the surface. Place in the fridge for at least 2 hours.
  3. In a saucepan, heat the cherries with sugar and lemon juice over medium heat. In a small bowl, dilute the cornstarch in the cold water, then add it to the cherries. Bring to a boil while stirring constantly until thickened (about 5 minutes). Allow to cool completely before pouring over the vanilla cream. Chill for 1 more hour before serving.
  4. Delicately slice the dessert. Decorate with some fresh cherries and chocolate chips if desired. Serve chilled and enjoy!

Notes

For variation, try using different fruits like raspberries or strawberries instead of cherries.
