  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 can cherry pie filling
  • Whipped cream
  • Chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Stir in the boiling water slowly until the batter becomes smooth. The batter will be thin.
  5. Pour the batter into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
  7. Once cooled, place one layer on a serving plate and spread the cherry pie filling evenly over the top.
  8. Place the second cake layer on top and cover the entire cake with whipped cream.
  9. Garnish with chocolate shavings and extra cherry pie filling, then chill in the refrigerator for at least 1 hour before serving.
