Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup finely chopped pistachios
  • 2 tbsp granulated sugar
  • 6 tbsp unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 2 tbsp fresh orange juice
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling or fresh cherries
  • 1/4 cup pistachios, roughly chopped
  • Optional: Thin slices of orange or lime for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, chopped pistachios, sugar, and melted butter until combined. Press the mixture firmly into the bottom of the prepared pan. Bake for 8-10 minutes, then set aside to cool.
  3. In a large mixing bowl, beat the cream cheese and sugar on medium speed until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Mix in the sour cream, orange juice, orange zest, and vanilla extract until fully combined.
  4. Pour the filling over the prepared crust and smooth the top. Place the springform pan on a baking sheet and bake for 50-60 minutes, or until the center is slightly jiggly but the edges are set.
  5. Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for 1 hour. Remove the cheesecake and refrigerate for at least 4 hours, preferably overnight.
  6. Spread the cherry pie filling or fresh cherries evenly over the chilled cheesecake. Sprinkle with chopped pistachios and garnish with orange or lime slices if desired.
  7. Slice and serve chilled for a refreshing dessert!

Notes

Ensure the cream cheese is softened fully for easy blending. Use a springform pan for easy removal after baking.
