- 1 1/2 cups graham cracker crumbs
- 1/2 cup finely chopped pistachios
- 2 tbsp granulated sugar
- 6 tbsp unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 2 tbsp fresh orange juice
- 1 tbsp orange zest
- 1 tsp vanilla extract
- 1 cup cherry pie filling or fresh cherries
- 1/4 cup pistachios, roughly chopped
- Optional: Thin slices of orange or lime for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a medium bowl, mix graham cracker crumbs, chopped pistachios, sugar, and melted butter until combined. Press the mixture firmly into the bottom of the prepared pan. Bake for 8-10 minutes, then set aside to cool.
- In a large mixing bowl, beat the cream cheese and sugar on medium speed until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Mix in the sour cream, orange juice, orange zest, and vanilla extract until fully combined.
- Pour the filling over the prepared crust and smooth the top. Place the springform pan on a baking sheet and bake for 50-60 minutes, or until the center is slightly jiggly but the edges are set.
- Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for 1 hour. Remove the cheesecake and refrigerate for at least 4 hours, preferably overnight.
- Spread the cherry pie filling or fresh cherries evenly over the chilled cheesecake. Sprinkle with chopped pistachios and garnish with orange or lime slices if desired.
- Slice and serve chilled for a refreshing dessert!

Ensure the cream cheese is softened fully for easy blending. Use a springform pan for easy removal after baking.
