Ingredients

  • 1 yellow cake mix
  • 1 (3 ounce) package orange gelatin
  • 1 cup boiling water
  • 1 (11 ounce) can mandarin oranges, drained
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 (8 ounce) container whipped topping, thawed
  • 1 (20 ounce) can crushed pineapple, well drained
  • Additional mandarin oranges, pineapple chunks, a raspberry, and a mint sprig for garnish

Instructions

  1. Bake the yellow cake mix according to package directions in a 9×13 inch pan and let it cool.
  2. Poke holes over the top of the cooled cake with a fork or the back of a wooden spoon.
  3. In a bowl, dissolve the orange gelatin in 1 cup boiling water, stirring until completely dissolved.
  4. Gently fold in the drained mandarin oranges, then pour this mixture evenly over the poked cake. Refrigerate for at least 2 hours until the gelatin sets.
  5. In a separate bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  6. Fold in the thawed whipped topping and well-drained crushed pineapple into the cream cheese mixture.
  7. Carefully spread this cream cheese and pineapple mixture over the set gelatin layer on the cake.
  8. Refrigerate for at least 1 hour before serving.
  9. Garnish individual servings with additional mandarin oranges, pineapple chunks, a raspberry, and a mint sprig if desired.

Notes

Make sure to let the cake cool completely before adding the gelatin. For best results, properly drain canned fruits to avoid excess liquid. This dessert can be made a day in advance; it tastes even better after chilling overnight.
