Ingredients

- 2 cups granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 1 teaspoon cinnamon oil
Instructions
- Line a baking sheet with parchment paper or a silicone baking mat. Have a candy thermometer handy.
- In a medium saucepan, combine the sugar, corn syrup, and water. Stir over medium heat until dissolved.
- Bring the mixture to a boil without stirring. Cook until it reaches 300°F on a candy thermometer.
- Remove from heat and carefully stir in cinnamon oil.
- Pour the hot candy onto the baking sheet and let it spread naturally or use a spoon.
- Allow to cool completely for 30 minutes to an hour.
- Break into pieces or shards and store in an airtight container for up to two weeks.
Notes
Be cautious with hot sugar and use a candy thermometer for best results.
