Description

A delightful dish combining sweet potatoes and apples roasted with warm cinnamon, perfect as a side or snack.


Ingredients

  • 2 medium sweet potatoes, peeled & cubed
  • 2 medium apples (Honeycrisp, Fuji, or Gala), cored & cubed
  • 2 tbsp olive oil
  • 2 tbsp honey or maple syrup

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the sweet potatoes and apples.
  3. Drizzle the olive oil and honey (or maple syrup) over the mixture, then toss until everything is well coated.
  4. Spread the mixture onto a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through.
  6. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat before serving.
