- 2 medium sweet potatoes, peeled & cubed
- 2 medium apples (Honeycrisp, Fuji, or Gala), cored & cubed
- 2 tbsp olive oil
- 2 tbsp honey or maple syrup
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the sweet potatoes and apples.
- Drizzle the olive oil and honey (or maple syrup) over the mixture, then toss until everything is well coated.
- Spread the mixture onto a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through.
- Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat before serving.
