Description

Ingredients

  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (230g) unsalted butter
  • 1 3/4 cups (350g) sugar
  • 4 eggs
  • 1 tbsp vanilla extract
  • 1 cup (240ml) milk
  • 1 cup fresh or frozen blueberries (tossed in a little flour)
  • 1 cup (230g) butter (for buttercream)
  • 4 cups (500g) powdered sugar
  • 1 tsp vanilla (for buttercream)
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 23 tbsp milk (to adjust buttercream texture)

Instructions

  1. Preheat your oven and start by creaming the butter and sugar together until fluffy.
  2. Add the eggs and vanilla extract, mixing until combined.
  3. Alternate adding the flour mixture and milk, stirring until well blended.
  4. Gently fold in the blueberries and pour the batter into two round cake pans.
  5. Bake until done and let cool completely.
  6. In a bowl, beat the butter for the buttercream until smooth. Gradually add the powdered sugar, lemon juice, lemon zest, and milk, whipping until light and fluffy.
  7. Assemble the cake by layering the cooled cakes with lemon buttercream between each layer.
  8. Apply a crumb coat to seal in the crumbs, chill to firm up, then frost smoothly with remaining buttercream.
  9. Cover with pale blue fondant and decorate with silver swirls, pearl beads, or edible star dust.
  10. Finish with a sugar or isomalt ‘glass slipper’ on top and optional clock detail.
  11. Slice and serve with vanilla ice cream or whipped cream.

Notes

Ensure all ingredients are at room temperature. Don’t overmix the batter to keep it light and fluffy. Use cornstarch when rolling out fondant to prevent sticking.
