A magical cake inspired by Cinderella, perfect for birthday celebrations with bright blue fondant and delightful decorations.

- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter
- 1 3/4 cups sugar
- 4 eggs
- 1 tbsp vanilla extract
- 1 cup milk
- 1 cup fresh or frozen blueberries
- 1 cup butter (for buttercream)
- 4 cups powdered sugar
- 1 tsp vanilla (for buttercream)
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 2–3 tbsp milk (to adjust buttercream texture)
Instructions
- Prepare the cake batter by creaming together the butter and sugar until light and fluffy. Add eggs one at a time and mix in vanilla extract.
- Alternate adding the dry ingredients and milk until well combined. Gently fold in blueberries.
- Divide the batter into two round cake pans and bake until done. Let the cakes cool completely.
- For the buttercream, beat the butter until smooth. Gradually add powdered sugar, lemon juice, lemon zest, and milk. Whip until fluffy.
- To assemble, place one cake layer on a serving plate and spread with lemon buttercream. Add the second layer and crumb coat the cake.
- Chill the cake, then frost it smoothly with remaining buttercream. Cover with blue fondant and decorate as desired.
Notes
Make sure all ingredients are at room temperature for best results. Gently fold in blueberries to prevent breaking.
