- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup granulated sugar for coating
- 1 tbsp ground cinnamon
- 1 cup caramel sauce (optional)
Instructions
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, along with the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
- In a small bowl, beat together the softened cream cheese, sugar, and vanilla extract until smooth. Transfer to a piping bag and set aside.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll the dough into 1-inch balls and flatten slightly. Pipe a small amount of the cheesecake filling into the center, then fold the dough over and roll into a smooth ball.
- In a shallow dish, combine sugar and ground cinnamon. Roll each cookie in the cinnamon mixture.
- Place cookies on the baking sheet, spacing them 2 inches apart. Bake for 12-15 minutes until lightly golden. Cool on a wire rack.
- Drizzle with caramel sauce if desired before serving.
Notes
Make sure your butter and cream cheese are softened for easy mixing. Don’t skip the cinnamon sugar coating for that classic churro taste!
