  • 1 cup granulated sugar (for the coating)
  • 1 tbsp ground cinnamon
  • 1 cup caramel sauce (optional)

Instructions

  1. In a large bowl, cream together the softened butter and sugar until fluffy. Beat in the eggs one at a time, then add the vanilla extract.
  2. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture until combined.
  3. In a separate bowl, beat the cream cheese, sugar, and vanilla until smooth. Transfer this mixture to a piping bag for easy filling.
  4. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll the cookie dough into balls, then flatten them slightly. Pipe the cheesecake filling onto the center of each cookie, fold the edges over to hide the filling, and roll to seal.
  5. In a small bowl, mix the sugar and cinnamon together. Roll the shaped cookies in this mixture to coat them.
  6. Place the coated cookies on the baking sheet and bake for 12-15 minutes or until they are lightly golden brown.
  7. Drizzle with caramel sauce if you like, and enjoy!
