Ingredients

  • 2 sticks (1 cup) unsalted butter, softened to room temperature
  • 1 cup sugar
  • 1 egg, room temperature
  • 1/2 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Colored sugars (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, sift together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the egg, vanilla extract, and almond extract to the butter mixture and beat until well combined.
  5. Gradually mix the dry ingredients into the wet mixture on low speed until smooth.
  6. Scoop about a teaspoon of dough, roll it into a ball, and coat in colored sugar.
  7. Place the dough balls on the baking sheets, spacing them 2 inches apart, and bake for 9–11 minutes until edges are golden and cookies are puffed.
  8. Cool on the pan for 3 minutes before transferring to a wire rack to cool completely.
