Ingredients

- 2 sticks (1 cup) unsalted butter, softened to room temperature
- 1 cup sugar
- 1 egg, room temperature
- 1/2 teaspoon almond extract
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Colored sugars (for rolling)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, sift together the flour, baking soda, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract to the butter mixture and beat until well combined.
- Gradually mix the dry ingredients into the wet mixture on low speed until smooth.
- Scoop about a teaspoon of dough, roll it into a ball, and coat in colored sugar.
- Place the dough balls on the baking sheets, spacing them 2 inches apart, and bake for 9–11 minutes until edges are golden and cookies are puffed.
- Cool on the pan for 3 minutes before transferring to a wire rack to cool completely.
