Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup whole milk, at room temperature
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar (for salted caramel)
  • 1/2 cup light corn syrup
  • 1/2 cup heavy cream (for salted caramel)
  • 1 teaspoon sea salt
  • 1 tablespoon unsalted butter
  • 1 cup semisweet chocolate chips
  • 1 cup heavy cream (for chocolate ganache)

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and flour three 9-inch (23cm) round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the cocoa powder, milk, eggs, and vanilla extract. Combine the wet and dry ingredients together until smooth.
  4. Divide the batter evenly among the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. In a saucepan, combine the sugar, corn syrup, and 1/4 cup heavy cream to prepare the salted caramel. Cook over medium heat, stirring constantly until it turns deep amber in color. Remove from heat and stir in the sea salt, butter, and remaining 1/4 cup heavy cream.
  6. In a double boiler, heat the chocolate chips and heavy cream until smooth to prepare the chocolate ganache.
  7. Assemble the cake by placing one layer on a serving plate, spreading salted caramel, followed by chocolate ganache. Repeat with remaining layers.
  8. Decorate with festive holly sprigs, red berries, or edible gold dust.

Notes

Ensure all ingredients are at room temperature for better mixing. Be careful while cooking the caramel to avoid burning. You can prepare cake layers in advance.
