Description

Ingredients

  • 1 ½ cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 2 large eggs
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 tsp vanilla extract
  • Fresh rosemary sprigs
  • Red candy-coated chocolates or cranberries
  • Edible glitter or powdered sugar
  • Optional: Ribbon or edible gold accents

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan or a ring-shaped pan.
  2. In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, whisk together the eggs, oil, buttermilk, food coloring, vanilla extract, and vinegar.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  5. Pour the batter into the prepared pan, smoothing the top.
  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Beat the cream cheese and butter together until creamy and smooth.
  9. Gradually add the powdered sugar, one cup at a time, until fully incorporated.
  10. Mix in the vanilla extract and beat until light and fluffy.
  11. Place the cooled cake on a serving plate or cake stand and spread or pipe the cream cheese frosting evenly over the cake.
  12. Arrange the rosemary sprigs around the top of the cake to create a wreath-like effect.
  13. Add red candy-coated chocolates or cranberries as ‘berries.’
  14. Sprinkle edible glitter or powdered sugar lightly over the wreath for a snowy effect.
  15. Slice and serve this show-stopping cake.

Notes

Make sure your ingredients are at room temperature for better mixing. Use a piping bag for easy decoration.
