Description

A delightful dessert layered with rich custard, sweet fruits, and crispy meringues, perfect for holiday celebrations.


Ingredients

  • 1.5 cups full cream milk
  • 1.5 cups thickened cream
  • 5 extra-large egg yolks
  • 1/2 cup caster sugar
  • 2 tbsp cornflour
  • 30g unsalted butter, cubed, softened
  • 1 tsp vanilla bean paste or pure vanilla extract
  • 250g cherries, halved, pitted
  • 1 white peach, pitted, cut into wedges
  • 1 yellow peach, pitted, cut into wedges
  • 1 white nectarine, pitted, cut into wedges
  • 1 yellow nectarine, pitted, cut into wedges
  • 1/4 cup lemon juice
  • 1/4 cup caster sugar
  • 250g raspberries
  • 2 cups thickened cream, whipped to soft peaks
  • 100g vanilla meringue kisses
  • 100g flavored meringue kisses

Instructions

  1. Make the Custard: In a saucepan, heat the milk and cream over medium heat until it simmers. In a separate bowl, whisk egg yolks, sugar, and salt until pale. Whisk in cornflour, then gradually add hot milk mixture. Pour back into saucepan and cook until thick. Remove from heat, whisk in butter and vanilla, strain, cover, and refrigerate for 2 hours.
  2. Macerate the Fruit: Toss cherries, peaches, nectarines, lemon juice, and sugar in a bowl. Let sit at room temperature for 30 minutes, then fold in raspberries.
  3. Assemble the Trifle: Spoon one-third of the macerated fruit into a glass serving dish. Layer with custard, whipped cream, and meringues. Repeat with remaining ingredients.
  4. Chill and Decorate: Refrigerate for 30 minutes, then decorate with remaining meringues before serving.

Notes

For the best results, prepare the custard and macerate the fruits the day before. Enjoy within two days for optimal texture of meringues.
