Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup eggnog
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, nutmeg, cinnamon, and salt.
  3. In another bowl, combine eggnog, vegetable oil, eggs, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the chopped pecans if desired.
  5. Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Notes

Make sure ingredients are at room temperature for better mixing. You can add chocolate chips or dried fruit for extra flavor.
