Chocolate Whipped Cream Cake with Strawberries

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup soured milk (1 tablespoon lemon juice or vinegar added to milk)
  • 1 cup black coffee
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups dark chocolate chips (50% cocoa or higher)
  • 2 rounded tablespoons icing sugar
  • 2 cups whipping cream
  • 3/4 cup chocolate chips
  • 1 1/2 tablespoons corn syrup
  • 3 tablespoons butter
  • 2 pounds fresh strawberries, washed and hulled

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, soured milk, coffee, vegetable oil, and vanilla extract. Beat until everything is smooth.
  4. Divide the batter between the prepared pans. Bake for 30-35 minutes until a toothpick comes out clean.
  5. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  6. Melt the dark chocolate and let it cool slightly. In a mixing bowl, whip the cream and icing sugar until soft peaks form, then fold in the melted chocolate.
  7. To assemble, place one cake layer on a serving plate. Spread some chocolate whipped cream on top and add half of the strawberries. Place the second layer on top and add the remaining chocolate whipped cream.
  8. In a saucepan, melt the chocolate chips, corn syrup, and butter to make ganache. Pour this over the cake.
  9. Garnish with the remaining strawberries and refrigerate for at least 1 hour before serving.

Notes

Store any leftover cake in the refrigerator for 3-4 days for best taste and texture.
