- 2 cups sugar
- 2 cups all-purpose flour
- 3/4 cup cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup soured milk (1 tablespoon lemon juice or vinegar added to milk)
- 1 cup black coffee
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups dark chocolate chips (50% cocoa or higher)
- 2 rounded tablespoons icing sugar
- 2 cups whipping cream
- 3/4 cup chocolate chips
- 1 1/2 tablespoons corn syrup
- 3 tablespoons butter
- 2 pounds fresh strawberries, washed and hulled
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, soured milk, coffee, vegetable oil, and vanilla extract. Beat until everything is smooth.
- Divide the batter between the prepared pans. Bake for 30-35 minutes until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- Melt the dark chocolate and let it cool slightly. In a mixing bowl, whip the cream and icing sugar until soft peaks form, then fold in the melted chocolate.
- To assemble, place one cake layer on a serving plate. Spread some chocolate whipped cream on top and add half of the strawberries. Place the second layer on top and add the remaining chocolate whipped cream.
- In a saucepan, melt the chocolate chips, corn syrup, and butter to make ganache. Pour this over the cake.
- Garnish with the remaining strawberries and refrigerate for at least 1 hour before serving.
Notes
Store any leftover cake in the refrigerator for 3-4 days for best taste and texture.
