Chocolate Whipped Cream Cake with Strawberries

Description

A delightful dessert combining rich chocolate and fresh strawberries, perfect for special occasions and a tasty treat.


Ingredients

  • 2 lbs fresh strawberries, washed
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup soured milk
  • 1 cup black coffee
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups dark chocolate chips (50% cocoa or higher)
  • 2 rounded tbsp icing sugar
  • 2 cups whipping cream
  • 3/4 cup chocolate chips
  • 1 1/2 tbsp corn syrup
  • 3 tbsp butter

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8 or 9-inch round cake pans.
  2. In a large mixing bowl, mix together the sugar, flour, cocoa, baking powder, baking soda, salt, eggs, soured milk, black coffee, vegetable oil, and vanilla extract. Beat the mixture for 2 minutes until well combined.
  3. Divide the batter between the prepared pans and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  4. Let the cakes cool in the pans for 5 minutes, then move them to a wire rack to cool completely.
  5. Melt the dark chocolate chips until smooth, let cool slightly.
  6. In a separate bowl, whip the cream and icing sugar until soft peaks form. Fold in the melted chocolate.
  7. Once cooled, spread a layer of chocolate whipped cream on top of one cake layer and place sliced strawberries on top. Place the second cake layer on top and spread the remaining whipped cream over the cake.
  8. For the ganache, melt chocolate chips with corn syrup and butter until smooth, then pour over the top of the cake.
  9. Decorate with fresh strawberries and refrigerate for at least 30 minutes before serving.

Notes

For best results, make sure eggs and soured milk are at room temperature. Store leftovers in the refrigerator for 3-4 days.
