- 8 oz (225g) semi-sweet or dark chocolate, finely chopped
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
- 8 oz (225g) semi-sweet or dark chocolate, melted and cooled (for coating)
- Optional toppings: cocoa powder, powdered sugar, crushed nuts, shredded coconut, or sprinkles
Instructions
- Prepare the Ganache Filling: Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for 2-3 minutes. Stir gently until the chocolate is completely melted and smooth. Add the softened butter and vanilla extract, stirring until fully incorporated. Cover the ganache with plastic wrap, ensuring it touches the surface. Refrigerate for 1-2 hours or until firm.
- Shape the Truffles: Once the ganache is firm, use a small scoop or teaspoon to portion out balls. Roll the portions between your palms to form smooth spheres. Place the truffles on a parchment-lined tray and chill in the refrigerator for 20-30 minutes.
- Coat the Truffles: Melt the remaining chocolate for coating in a heatproof bowl over a pot of simmering water or in the microwave in short bursts. Let it cool slightly. Dip each chilled truffle into the melted chocolate using a fork or truffle dipper. Tap off excess chocolate and place the coated truffles back on the parchment-lined tray. While the chocolate is still wet, sprinkle with your desired toppings or leave them plain.
- Set and Serve: Allow the truffles to set at room temperature or refrigerate until the coating is firm. Store the truffles in an airtight container in the refrigerator for up to 2 weeks.
