A decadent dessert combining rich chocolate flavors and creamy cheesecake, topped with chocolate ganache and garnished with truffles.

- 2 cups chocolate cookie crumbs
- 1/2 cup melted butter
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
- Chocolate truffles for garnish
- Chocolate shavings for garnish
Instructions
- Preheat oven to 325°F (160°C).
- Mix chocolate cookie crumbs and melted butter in a bowl. Press this mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then take it out and let it cool.
- Beat the softened cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Pour the filling over the cooled crust.
- Bake for 55-65 minutes, or until the center is nearly set.
- Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
- Remove from the oven and let it cool completely on a wire rack, then refrigerate for at least 4 hours, or overnight.
- For the ganache, heat the heavy cream in a saucepan until simmering, then pour it over the chopped chocolate. Let sit for 5 minutes, then whisk until smooth.
- Let the ganache cool slightly, then pour it over the chilled cheesecake.
- Before serving, garnish with chocolate truffles and chocolate shavings.
Notes
Store leftovers in an airtight container in the refrigerator for 5 to 7 days, or freeze for up to 3 months.
