Chocolate Truffle Cheesecake

Description

A decadent dessert combining rich chocolate flavors and creamy cheesecake, topped with chocolate ganache and garnished with truffles.


Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/2 cup melted butter
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped
  • Chocolate truffles for garnish
  • Chocolate shavings for garnish

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix chocolate cookie crumbs and melted butter in a bowl. Press this mixture firmly into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes, then take it out and let it cool.
  4. Beat the softened cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Pour the filling over the cooled crust.
  6. Bake for 55-65 minutes, or until the center is nearly set.
  7. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
  8. Remove from the oven and let it cool completely on a wire rack, then refrigerate for at least 4 hours, or overnight.
  9. For the ganache, heat the heavy cream in a saucepan until simmering, then pour it over the chopped chocolate. Let sit for 5 minutes, then whisk until smooth.
  10. Let the ganache cool slightly, then pour it over the chilled cheesecake.
  11. Before serving, garnish with chocolate truffles and chocolate shavings.

Notes

Store leftovers in an airtight container in the refrigerator for 5 to 7 days, or freeze for up to 3 months.
