Chocolate Thumbprint Cookies are a delightful treat with rich chocolate flavor and a smooth ganache filling, perfect for any occasion.

- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder (Dutch process)
- 1/2 tsp salt
- 1/2 tsp baking powder
- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 1/4 cup granulated white sugar
- 2 egg yolks (at room temperature)
- 1 1/2 tsp vanilla bean paste or extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
- Nonpareils for sprinkling on top (optional)
Instructions
- Prepare the Cookies: Line two baking sheets with parchment paper. In a medium bowl, whisk together flour, cocoa powder, salt, and baking powder. In a large bowl, beat the softened butter, brown sugar, and granulated sugar together for about 2 minutes until creamy. Add egg yolks and vanilla, mixing until pale and fluffy (about 1-2 minutes). Gradually add dry ingredients and mix until just combined. Scoop out about 34 portions of dough, rolling them into balls. Place the balls on the prepared baking sheets, then use a 1/4 teaspoon to press down into the center of each dough ball. Chill in the fridge for at least 1 hour.
- Bake the Cookies: Preheat your oven to 350°F (175°C). Arrange the chilled dough balls about 1 1/2 inches apart on the baking sheets. Bake for 9-11 minutes (10 minutes is ideal). If the indents lose their shape, gently press them back with the 1/4 teaspoon. Once baked, let cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
- Prepare the Ganache: Place chocolate chips in a small bowl. Heat heavy cream until nearly boiling, then pour over chocolate chips. Let sit for 1 minute, then stir until smooth.
- Assemble the Cookies: Once cookies are cool, fill the indents with about 1 teaspoon of ganache. If desired, sprinkle nonpareils on top. Chill cookies in the fridge for about 10-15 minutes to set the ganache.
Notes
Store cookies in an airtight container at room temperature for up to one week, or freeze them wrapped in plastic for up to three months.
