- 4 large eggs
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1 1/2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 cup cherry pie filling or fresh pitted cherries
- 2 tbsp cherry liqueur (optional)
- 1/2 cup chocolate shavings or curls
- Fresh cherries
Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- Beat the eggs and sugar with an electric mixer on high speed for 5 minutes, or until thick and pale. Gently fold in the vanilla extract and sifted cocoa powder.
- Spread the batter evenly in the prepared pan and bake for 10–12 minutes.
- Once baked, turn the cake out onto a clean kitchen towel dusted with powdered sugar and gently roll it up. Allow it to cool completely.
- In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Unroll the cooled cake, spread whipped cream, and add cherry filling on top. Roll it back up seam-side down.
- Spread remaining whipped cream on the outside and decorate with chocolate shavings and fresh cherries.
- Refrigerate for at least 1 hour before serving.
Notes
Be gentle when rolling the cake to prevent cracking and ensure all ingredients are at room temperature for best results.
